Quinoa & Cabbage Roast

Check out this easy peasy, toss it all in a pan and you’re ready to go meal!

Ingredients 

• 4 tbs olive oil

• 1 onion, sliced 

• 3/4 cup quinoa 

• One can (14 oz) diced tomatoes 

• 1-2 carrots 

• 1 small cabbage

• 1-2 sweet potatos

• 2 garlic cloves 

• 1 tsp salt 

• Pepper (to taste) 

• 1 tsp dried oregano 

Instructions

  1. Preheat oven to 350°

  2. Prepare your vegetables. Slice onions, shred carrots, cut cabbage and sweet potato into wedges.

  3. Start with 2 tbs of olive oil at the bottom of your pan.

  4. Add ingredients to roasting pan in the following order:

    • Onion

    • Quinoa

    • Salt

    • 1/2 can of tomatoes

    • Carrots

    • Cabbage

    • Sweet potato *try to fit the cabbage and sweet potato in tightly.

    • Second half of you can of tomatoes

    • Seasoning

    • 2 tbs Olive oil

  5. Season to your liking, I added more oregano as well as some garlic powder.

  6. Bake with lid for one hour.

  7. Uncover and broil for 5 minutes or until cabbage has browned.
