Lentil Vegetable Soup

This week’s meal is Lentil Vegetable Soup made in the slow cooker. I’ve enjoyed trying some vegetarian meals, as long as I can find a way of making it filling with something high in protein. Lentils have been an excellent choice for this, and I continue to explore different recipes that include them. 

Recipe

Ingredients

  • 1.5 cup red lentil

  • 4 large carrots peeled and chopped

  • 1 red bell pepper

  • 2 celery stalks chopped

  • 2 cups chopped kale

  • 2 potatoes peeled and chopped

  • 2 cloves of garlic pressed (okay, this is the acceptable amount to put in a recipe, in reality I probably had about 6 cloves of garlic - I LOVE garlic)

  • 1/2 an onion chopped

  • 1 tsp salt

  • 1 tsp parsley

  • 1/2 tsp paprika

  • 1/2 tsp paprika

  • 1/2 tsp oregano

  • 1/2 tsp garlic salt

  • 1/4 tsp chili powder

  • 6.5 cup vegetable stock

Instructions

  1. Put it all in the slow cooker, stir it all together.

  2. Cook on high for 5 hours or low for 8 hours (I prefer the low and slow.) Open it up a few times during the day to stir and admire your beautiful soup.

  3. Serve! Or divide out to you meal servings for the week.
