Grilled Zucchini & Corn Salad

This one was a shot in the dark for me, I haven’t had many recipes with zucchini, but I loved it! I’ve modified the ingredients according to how I prepared this throughout the week for lunches (i.e. the slightly lazier way. Again, the chicken wasn’t originally a part of the recipe, but I added it to bulk up my lunch. 

Ingredients

  • 3-4 zucchini’s (depending on the size) 

  • 2 cups of corn 

  • 1 cup feta cheese (or if you’re a cheese maniac like me, use the whole package across the entire week of eating this salad) 

  • One package arugula (142 gram) 

  • 2-3 tbsp olive oil

  • 2-3 tbsp lemon juice

  • 2-3 chicken breast (shredded/sliced/however you like it) 

Instructions 

  1. As per usual, prepare your chicken however you like (if you decide to add it.)

  2. Slice the zucchini into thick slices. Drizzle with olive oil, then grill in a pan until golden brown and charred.

  3. Remove from the pan and place in a large bowl. 

  4. Add the corn to the hot pan and cook until golden brown. 

  5. Place the charred corn into the bowl with the zucchini, then add the crumbled feta cheese, fresh arugula and chicken.*

  6. Mix your olive oil and lemon juice, then drizzle over salad to your taste.

*I had this for work lunches throughout the week. So, this meant that I premixed my zucchini and corn, then divvied put the arugula, chicken, feta and dressing each day.
