Chicken Zucchini Casserole

This was by far one of the easiest meals I’ve prepared in a long time and still exceptionally delicious. 

Ingredients

• 1 small rotisserie chicken or 3 medium chicken breasts 

• 3 medium zucchinis 

• 1 box stuffing mix

• 1/4 cup butter 

• 1 (10 oz) can cream of chicken soup

• 1/2 cup sour cream

• salt, pepper, garlic powder (to taste)  

*You can add any other veggies you’d like! I added some mushroom and onion to mine, because what’s a casserole without mushroom and onion? 

Instructions

  1. Preheat oven to 350°F

  2. Shred your chicken (I know you know to cook the chicken breast if you went with that option.)

  3. Dice your zucchini and any other veggies.

  4. In a large bowl, melt the butter and mix in the box of stuffing. Set aside HALF the mixture for topping the casserole later.

  5. Add the chicken, diced zucchini, cream of chicken soup and sour cream to the stuffing and mix well.

  6. Spread the mixture into your baking dish and then evenly sprinkle the top with the remaining stuffing.

  7. Bake, uncover for 35-45 minutes (until top is golden brown.)

I topped mine with sour cream because sour cream is amazing and you really can’t have too much. I really loved this dish for a lunch, it felt lighter than you usually get with a casserole but it was also filling. I’m considering adding some shredded cheese the next time!
