Spicy Air Fryer Shrimp Tacos

This meal was a combination of various recipes. I saw the tacos with the homemade coleslaw online and then took the recommendation of shrimp in the air fryer from Peloton instructor Kendall Toole. Honestly, the spices were basically what I had in my cupboard and based on my love of heat. I can confidently say that these are the best shrimp I have ever cooked. I don’t know if it was the spices or the air fryer instead of the stovetop, but they were perfectly cooked and delicious. I also audibly groaned with pleasure when I took my first bite of the coleslaw. Maybe I’m overselling it, but I hope you enjoy this recipe! 

Ingredients 

  • 4 soft small tortilla

  • 9-12 jumbo shrimp

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1/2 tbsp olive oil

  • Salt and pepper to taste

  • 1 cup finely shredded cabbage OR bag of coleslaw mix

  • 1 jalapeño pepper

  • 1-2 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1/8 tsp salt

  • Fresh cilantro

  • 1 tbsp sriracha

  • 1/4 cup mayo OR ranch dressing

  • 1/2 cup corn

Instructions

  1. Defrost your shrimp. Peel and clean. Pat dry.

  2. Drizzle with olive oil, I find this helps your spices to stick.

  3. Toss shrimp with chili powder, garlic powder, salt & pepper.

  4. Cook in air fryer at 400 for 8-10 minutes.

  5. For your slaw, finely chop your jalapeño, Combine with your cabbage/coleslaw mix, apple cider vinegar, honey, salt and pepper. Add cilantro, whatever amount fits your taste! Had juice from half the lime. Adjust honey to your taste.

  6. I added the corn, briefly heated in a pan, with a few spices just as a bonus.

  7. For dressing combine sriracha with mayo or ranch dressing, whichever is your preference. Feel free to adjust these amounts to your taste.

  8. Throw it all in a tortilla in whatever order you want! I like to spread the sauce on the tortilla, toss in a tiny mountain of slaw and then line with 3-4 shrimp.
